VEGAN CANTUCCI

INGREDIENTS


3 C (430 gr) spelt flour
1 1/2 C (260 gr)  Brown sugar
2 TBSP (40 gr) Corn starch
1 TBSP (10gr) Backing powder
salt, vanille
Zest of one lemon and one orange
1 1/4 C (310 ml) water
1/2 C Extra Virgin Olive oil or a light seed oil like sunflower
1 C Chopped Almonds

INSTRUCTIONS


Preheat the oven to 175 degree.
Chop the almonds.
Mix in a medium bowl flour, brown sugar, Corn starch, backing powder, salt , vanilla and both Zest.
Add water and oil and gently mix with your hand.
Add slowly the chopped almonds and keep work the dough until everything is well mixed.
Divide the dough into three pieces.
Shape each into a skinny log , long like your oven pan, 3 cm wide an about 1 / 1.5 cm high.
Place them on the baking sheet, spacing them few cm apart.
Bake for 15/25 minutes (depend of your oven) or until they are lightly brown and stay firm with a small pressure of your fingertip.
Remove from the oven and cool for few mintes.
Put the log on the cutting board and cut 1cm / 1.5 cm slices (depend of your taste).Do that for each log.
Place the slices down on th backing sheets and bake again for 5/10 minutes, turning the backing sheet if necessary.
They should be ready when the colour is hightly brown.
Let them cool before eat.
Your vegan cantucci are ready!!
